Oatmeal Granola Cookies

Yummy and healthy Gluten Free and Sugar Free cookies.

Oatmeal Granola Cookies

Ingredients

  • 1/2 cup unsalted butter – room temp.
  • 1 cup XYLA
  • 3 teaspoons vanilla extract
  • 2 eggs – room temp
  • 1 1/2 cup Bob’s Red Mill Extra Thick Gluten Free Rolled Oat
  • 1 1/2 cups Udis Gluten Free Vanilla Granola
  • 1 cup Pamela’s Gluten Free Flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 1/2 teaspoon Kosher salt

Takes 10 min

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In a standing mixer combine the butter and XYLA (about 4 to 5 minutes). Add vanilla extract and eggs to this mixture.
  3. In a separate bowl combine all the dry ingredients and whisk together. Add the dry mixture to the mixer and combine well.
  4. Using a small scoop place cookies on the parchment lined baking sheets about 2 inches apart. Bake for 9 to 11 minutes. Cool on baking sheets for about 5 minutes then move to cooling rack to continue cooling.

You Can’t Just Eat One Cashew Cookie

I named these “You can’t eat just one Cashew cookie” because it is true…no one who has had them could do it…always went back for another…and to me that makes it a great cookie.

You Can’t Just Eat One Cashew Cookie

Ingredients

  • 1/2 cup unsalted butter – room temperature
  • 1 cup XYLA
  • 2 eggs – room temperature
  • 3 teaspoons vanilla extract
  • 2 cups Pamela’s Gluten Free Flour
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon Kosher salt
  • 1 cup Once Again Unsweetened / Salt free Creamy Cashew Butter
  • 2 cups finely chopped cashews

Takes 9 min

Instructions

  1. Preheat oven to 350 degrees
  2. line cookie sheets with parchment paper
  3. In the bowl of a standing mixer combine the butter and XYLA on medium speed until well combined. Add in the vanilla extract and eggs and continue to combine. Add in the cashew butter.
  4. While the butter/Xyla are combining in a separate bowl combine the flour, baking powder, xanthan gum, salt and chopped cashews. Whisk together.
  5. Turn mixture to low and add dry ingredients and mix until well combined. Use a spatula to scrape the bowl to make sure all is combine well.
  6. Using a small (or large if you want larger cookies) scoop and place on parchment line cookie sheet about 2 inches apart.
  7. Bake for 9 minutes, let cool on baking sheet for about 10 minutes, then move to cooling rack.

Chocolate Walnut Cookies

These are cakey chocolate cookies with walnuts and believe me no one can tell that dates have been snuck in. So shhhh and let’s eat cookies.

Chocolate Walnut Cookies

Ingredients

  • 1/2 stick non-salted butter- room temp
  • 1/2 cup Organic Palm Sugar
  • 1/2 cup finely chopped dates
  • 2 teaspoon vanilla extract
  • 1 square of unsweetened chocolate
  • 1/2 cup brewed decaf coffee
  • 1/4 cup Organic Palm sugar
  • 1 egg – room temp
  • 2 cups gluten free flour
  • 1/2 teaspoon xanathan gum
  • 1/4 teaspoon Kosher salt
  • 1 teaspoon baking powder
  • 1 1/4 chopped walnuts

Takes 10 min

Instructions

  1. Preheat oven to 350 degrees
  2. Line cookie sheets with parchment paper.
  3. In the standing mixer combine ingredients 1 thru 4.
  4. Melt the unsweetened chocolate in a bowl over a pan of boiling water (aka double boiler) with ingredients 3, 6 & 7.
  5. While the chocolate is melting in a mixer combine the butter and 1/2 cup of Organic Palm Sugar (ingredients 1 and 2). Slowly add the melted chocolate mixture to the butter mixture in the mixer and combine well. Add the vanilla extract and egg and continue to mix until well combined.
  6. In a separate bowl whisk ingredients 9 thru 12 together and slowly add to the wet mixer, combine until well mixed.
  7. Stir in the chopped walnuts.
  8. Using a scoop place cookies on line sheets about 2 inches apart and bake for 9 to 11 minutes.

Oatmeal w/ Peanut Butter & Chocolate Chip Cookies

Not sure what kind of cookie you want, oatmeal? peanut butter? chocolate chip? peanut butter and chocolate? well with this cookie you don’t have to decide as you get three great flavors in one.

Oatmeal with Peanut Butter & Chocolate Chip Cookies

Ingredients

  • 1 cup gluten free oats (I use Bob’s Red Mill)
  • 1/1/4 cup gluten free flour (I use Pamela’s brand)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon Xanthan
  • 1 stick room temperature unsalted butter
  • 1/2 cup Organic Coconut Palm Sugar
  • 1/2 cup XYLA
  • 1 cup crunchy peanut butter (I use Trader Joe’s brand of natural peanut butter)
  • 2 large eggs – room temperature
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (I use Enjoy Life brand)
  • 1/2 cup chopped peanuts (I use the Trader Joe’s 50% less salt kind)

Takes 10 min

Instructions

  1. Preheat oven to 350 degrees
  2. In a standing mixer combine the butter with the Palm Sugar and XYLA.
  3. While butter mixture is combining whisk flour, baking soda,xanthan and salt in a small bowl.
  4. With the mixer still running add in the peanut butter, eggs and vanilla. Mix till combined.
  5. With the mixer on low add the flour mixture. Add in the oats, chopped peanuts and chocolate chips.
  6. Using the small scoop place the dough on the parchment lined cookie sheet about 2 inches apart and bake for approx. 15 minutes.
  7. Let cool on cookie sheet for about 5 minutes than move to a cooling rack to continue the cooling.

Pumpkin Chocolate Chip Bites

Ingredients

  • 1/2 cup unsalted butter – room temperature
  • 1 cup XYLA (see helpful hints)
  • 1 egg
  • 1 cup canned pumpkin (not the pumpkin pie one)
  • 2 teaspoons vanilla extract
  • 2 1/4 cups gluten free flour
  • 2 teaspoon pumpkin spice
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon Kosher salt
  • 1 cup mini chocolate chips

Takes 10 min

Instructions

  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.
  2. In a standing mixer combine the butter & XYLA. Mix until well combined. Add pumpkin, vanilla extract and egg and continue to mix till all is combined.
  3. While the wet ingredients are mixing in a separate bowl combine all the dry ingredients except the chocolate chips.
  4. Add the dry ingredients to the mixer to combine with the wet.
  5. After all ingredients are well combined hand mix in the chocolate chips
  6. Using a small ice cream scoop place dough about 2 inches apart on the lined sheets.s.
  7. Bake at 350 degrees for 11 to 12 minutes.
  8. Let bites cool on cookie sheet for about 5 to 10 minutes than move to cooling rack to complete cooling.
