Ooey Gooey Spicy Mac and Cheese

January 3, 2018 by Jo Barnett

I know that everyone is into posting healthy meals to start the New Year off on a healthy note, but you might be looking for that delicious creamy mac and cheese that has a kick to it.  It is easy to make and does not require any baking.

Ooey Gooey Spicy Mac and Cheese

Ingredients:

  • 3 to 4 tablespoons olive oil
  • 1 tablespoon butter
  • 1 garlic clove – whole
  • 1 cup finely chopped onion
  • salt and pepper
  • 1/2 cup Pamela’s Gluten Free flour
  • 1 cup plain unsweetened almond milk + 1/2 cup
  • 2 cups shredded pepper jack cheese
  • 2 cups shredded light mozzarella
  • 12 oz sharp yellow cheddar
  • 1 1/2 teaspoon white pepper
  • salt
  • 1 16oz bag brown rice penne (or any macaroni you want) cooked to just al dente
  • 2 cups of pasta water reserved – to be added 1/2 cup at a time
  1. In a large dutch oven heat the olive oil and butter with the whole garlic clove. Add the chopped onion, salt and pepper and saute for 5 to 7 minutes. Remove the garlic clove. Add the flour and 1 cup of the almond milk to create a roux, cook for about 3 to 5 minutes. Add the cheeses, white pepper, salt to taste. Add the 1/2 cup of almond milk and 1/2 cup of the pasta water at a time until the sauce is the ooey gooey consistency you like. Simmer all the ingredients together until cheese is all melted and hot.

Spicy Shrimp with Fennel

May 4, 2017 by Jo Barnett

Another 1 pan easy to fix meal. I made the spicy shrimp two ways: 1. with wasabi paste and 2. with dried chili peppers. Both versions came out terrific so I am writing this recipe as an either or in regards to which spice you choose to use.

If you love asparagus or want to make asparagus a favorite vegetable of others try this easy recipe. It is a great side dish to go with any protein or on top of pasta for vegetarian meal.

Spicy Shrimp with Fennel

Ingredients:

  • 8 medium cleaned shrimp
  • 1 fennel sliced
  • 2 tablespoons olive oil
  • salt and pepper

For the Marinade:

  • 2 tablespoon tequila
  • 1 teaspoon wasabi paste or dried chili pepper flakes
  • 1 teaspoon mirin
  • 1 teaspoon fresh lemon juice
  1. Combine the ingredients for the marinade in a bowl, add the shrimp which has been salt and peppered to taste and marinate for about 10 to 15 minutes.
  2. In a skillet heat the olive oil, add the sliced fennel with some salt and saute for about 7 minutes. Add the shrimp to the pan and cook until the shrimp is plump and pink (careful not to over cook the shrimp).

A Touch Spicy / A Touch Sweet Rainbow Carrots

July 9, 2016 by Jo Barnett

Saw these beautiful rainbow carrots at the store and just had to have them. This is easy and only takes 7 to 8 minutes to complete.

A Touch Spicy / A Touch Sweet Rainbow Carrots

Ingredients

  • 1 bunch rainbow carrots (sure you can use on color if that is all you can find) I did not peel the carrots. Sliced them in half.
  • 1 tablespoon olive oil
  • 1/8 teaspoon red chili pepper flakes (this depends on your level of liking hotness- you can always add more)
  • 1/4 teaspoon honey
  • 1/4 teaspoon Kosher salt
  • 1 large garlic clove – whole/smashed

Takes 7-8 min

Instructions

  1. In a large skillet heat the olive oil with the garlic clove. When oil is hot and before the garlic burns remove the garlic clove and add the carrots and salt. Cook on med/high for about 5 minutes. Add chili pepper flakes and honey and cook for another 2 to 3 minutes and you are ready to serve.
  2. The carrots still have a bit of crunch with a light sweetness and then just a bit of heat.
