Ooey Gooey Spicy Mac and Cheese

I know that everyone is into posting healthy meals to start the New Year off on a healthy note, but you might be looking for that delicious creamy mac and cheese that has a kick to it.  It is easy to make and does not require any baking.

Ooey Gooey Spicy Mac and Cheese

Ingredients:

  • 3 to 4 tablespoons olive oil
  • 1 tablespoon butter
  • 1 garlic clove – whole
  • 1 cup finely chopped onion
  • salt and pepper
  • 1/2 cup Pamela’s Gluten Free flour
  • 1 cup plain unsweetened almond milk + 1/2 cup
  • 2 cups shredded pepper jack cheese
  • 2 cups shredded light mozzarella
  • 12 oz sharp yellow cheddar
  • 1 1/2 teaspoon white pepper
  • salt
  • 1 16oz bag brown rice penne (or any macaroni you want) cooked to just al dente
  • 2 cups of pasta water reserved – to be added 1/2 cup at a time
  1. In a large dutch oven heat the olive oil and butter with the whole garlic clove. Add the chopped onion, salt and pepper and saute for 5 to 7 minutes. Remove the garlic clove. Add the flour and 1 cup of the almond milk to create a roux, cook for about 3 to 5 minutes. Add the cheeses, white pepper, salt to taste. Add the 1/2 cup of almond milk and 1/2 cup of the pasta water at a time until the sauce is the ooey gooey consistency you like. Simmer all the ingredients together until cheese is all melted and hot.

Donuts – they are baked not fried

These donuts are so yummy. They are baked not fried, so that a bonus. And they don’t go stale and hard after one day.

Donuts – they are baked not fried

Ingredients:

  • 5 tablespoons room temperature unsalted butter
  • 1/2 cup Xyla
  • 1 large egg – room temperature
  • 1/2 cup Califia Farms Almond Creamer
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/4 teaspoon Kosher salt
  • 1 1/2 cups Pamela’s Gluten Free Flour
  • 1 teaspoon Xanthan gum

Optional Ingredients (to make toppings or frosting:)

  • room temperature butter
  • Enjoy Life Mini Chocolate Chips
  • Vanilla Extract
  • Coconut Palm Sugar
  • Cinnamon

Optional Ingredients (to make chocolate donuts:)

  • 1/2 cup Unsweetened cocoa powder
  1. and of course you will need donut baking pans (unless you just want to make donut holes).
  2. Preheat oven to 325. Spray donut pans with non-stick cooking spray.
  3. In a standing mixture combine the wet ingredients (the dough at this point will look like cottage cheese but do not worry it is fine). Combine the dry ingredients in a separate bowl and add to the mixer to combine. Fill the donut rings about half way up with dough (as it will rise when cooking). Bake for 15 to 17 minutes. Let cool, then remove from donut pan.
  4. Want chocolate frosting: heat butter and chocolate chips together, when melted add a splash of vanilla extract. Dip the cooled donuts into the chocolate and place on cooling rack.
  5. Want cinnamon topped donuts: elt room temperature butter with Coconut Palm Sugar and Cinnamon. Dip the cooled donuts into the mixture and place on cooling rack.

Sour Cream Cinnamon Pecan Coffee Cake

This coffee cake is so delicious that it should be called OMG Coffee Cake…it’s moist, cinnamonny, and loaded with pecans. It is a must try.

INGREDIENTS:

filling:

  • 1 cup chopped pecans
  • 1/4 cup Palm Coconut Sugar
  • 1 teaspoon cinnamon
  • 2 tablespoon melted butter

cake batter:

  • 2/3 cup butter – room temperature
  • 1 cup Xyla
  • 2 teaspoons vanilla extract
  • 1 cup low fat sour cream – room temperature
  • 2 cups Pamela’s Gluten Free Flour
  • 2 large eggs – room temperature

glaze:

  • 1/2 cup Powder Xyla
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cinnamon
  • 2 to 3 tablespoons water

Preheat oven to 350. Line a 7 x 11 baking dish with a piece of parchment paper (I spray the bottom of the pan with no stick spray which keeps the parchment in place while filling pan).

In a small bowl combine all the filling ingredients and set aside.

For the cake: mix the Xyla and butter until well combined. Add vanilla extract, eggs and sour cream and combine. Add flour and mix well.

Spoon 1/2 the batter into the parchment lined pan, sprinkle with 1/2 the pecan mixture and swirl them thru the batter, spoon the remaining batter on top then top with the remaining pecans.

Bake for 40 to 45 minutes. Let cool in pan. Lift parchment paper to remove cake from pan.

While cake is cooling, combine the glaze ingredients then drizzle on the cooled cake.

Almond Cookies

Sometimes you feel like a nut and sometimes you don’t, well I was in the mood for almonds and what better way to eat them than in a delicious cookie.

Almond Cookies

Ingredients:

  • 1 stick unsalted butter – room temperature
  • 1 cup Xylitol
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 egg – room temperature
  • 1 stick unsalted butter – room temperature
  • 1 cup Pamela’s Gluten free flour
  • 1 cup Almond Meal
  • 1 teaspoon baking powder
  • 1 teaspoon Xanthan
  • 1 cup unsalted dry toasted sliced almonds + extra for garnish
  1. Pre heat oven to 350 degrees.
  2. Line baking sheets with parchment paper.
  3. In a standing mixer cream the butter and Xylitol together, when combined add in the extracts and almond butter, combine and then add the egg. Scrape the bottom of the mixing bowl to make sure all the ingredients are well combined..
  4. In a separate bowl combine the flour, almond meal, baking powder, xanthan, and sliced almonds. Whisk the dry ingredients together.
  5. Slowly add to the wet ingredients and combine well.
  6. Using a small scoop place on lined cookie sheets at least 1 1/2 inches apart. Slightly smoosh the cooking down and add a few slices of almond slices to the top. Bake for 9 to 11 minutes. Let sit on baking sheet to cool completely.

Salt & Pepper Chip Crusted Chicken

My latest obsession is salt and pepper potato chips, I know it’s not the healthiest of snacks but sometime you just have to be bad. So I decided to turn my bad into a not so bad but very yummy crispy chicken that is baked, see, so sent back to a bit healthy. This chicken is great for a picnic, easy dinner or just a snack.

Salt & Pepper Chip Crusted Chicken

Ingredients:

  • 2 cups Salt and Pepper potato chips – crushed
  • 2 eggs with a little water whisk together
  • 1/2 cup Pamela’s Gluten free flour
  • and of course chicken – I used 6 boneless/skinless chicken thighs, but you could use your favorite cut of chicken or even chicken tenders (just remember to adjust the cooking time for the thickness of the chicken you are using.
  1. Preheat oven to 400 – place baking sheet in oven to heat up while oven is getting warm and you are dredging the chicken.
  2. Place each dry ingredient in a separate dredge bowl, dip chicken into the flour, then egg, then crushed chips. Place the crusted chicken on a cooling rack while completing the dredging.
  3. Using a pot holder remove heated baking sheet from oven, place chicken on it and bake at 400 for 25 to 30 minutes.
