White Chicken Chili

Because everyone needs more than one chili recipe I decided to make a white chicken chili.  Brought it to work for taste testing and it was a huge hit.

White Chicken Chili

Ingredients:

  • 6 to 10 garlic cloves – finely chopped
  • 1 med red onion – finely chopped
  • 1 med yellow onion – finely chopped
  • 5 boneless, skinless chicken thighs –
  • 2 boneless, skinless chicken breasts –
  • 4 shisito peppers – chopped finely + 3 shisito peppers – finely chopped
  • 1 jalapeno pepper – roasted, deseeded and deveined
  • 1 quart chicken broth (low sodium)
  • 1/4 teaspoon chili powder + 1/4 teaspoon chili powder
  • 1/4 teaspoon cayenne + 1/4 teaspoon cayenne
  • 1/4 teaspoon red chili peppers flakes + 1/4 teaspoon red chili peppers flakes
  • 3 cans green chilies
  • 1/4 teaspoon kosher salt
  • 1 cup defrosted frozen roasted corn
  • 4 15.5 oz white kidney beans
  • 1/2 15.25oz can corn
  • 5 to 7 tablespoon olive oil
  • optional toppings: cilantro, sour cream, avocado, tortilla chips, raw jalapenos
  1. In a food processor puree 1 can of kidney beans (not drained) and the 1/2 can corn – set aside to use later.
  2. Heat the 2 to 3 tablespoons of olive oil in a large dutch oven. Add chicken and cook for 5 to 7 minutes on each side. Remove from pot, add the remaining olive oil, cook the onions and shisito pepper, lightly salt, add the garlic and cook for another few minutes. While the mixture is cooking cut the chicken into bite size pieces.
  3. Add the chicken back into the pot with 1 qt chicken broth, roasted jalapeno, chili powder, cayenne, red chili pepper flakes, 3 cans green chilies, 1/4 teaspoon kosher salt and simmer for 35 minutes. Add the additional chili powder, cayenne, red chili pepper flakes, 3 drained cans of white kidney beans, roasted corn, and additional 3 shisito peppers. Also add the white bean and corn puree. Stir well and simmer for 10 to 15 minutes.

Chicken Chorizo Sausage and Black Bean Chili

It’s almost time for Super Bowl – the teams are getting ready to score big and you are now planning the Super Bowl Party Menu and you can also score big with this Chicken Chorizo and Black Been Chili as it is a huge winner.

Chicken Chorizo Sausage and Black Bean Chili

Ingredients

  • 1.5 lb (5 sausages) Chicken chorizo sausages (I found that Whole Foods makes chicken chorizo sausages but if you want you could use pork) – meat removed from casings
  • 1 large white onion – diced
  • 1 large shallot – diced
  • 1 red pepper – diced
  • 1 orange pepper – diced
  • 2 jalapenos – seeded and deveined – finely chopped
  • 4 garlic cloves – finely chopped
  • 1 dried chili ancho – stem removed and finely chopped
  • 1/2 teaspoon chipotle pepper
  • 1/2 teaspoon cayenne
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 bay leaf
  • 1 28 oz can fire roasted tomatoes
  • 1 14.5 oz can fire roasted tomatoes
  • 2 – 15 oz cans black beans – rinsed and drained
  • 3 to 4 tablespoons olive oil
  • salt and pepper
  1. Heat olive oil in a cast iron dutch oven, add the chorizo, crumble and cook about 3/4 the way thru. Add the onion, shallot, peppers to pot, lightly salt and pepper, saute for about 5 minutes, then add the garlic, saute for another 3minutes. Add all the remaining ingredients, stir to combine and simmer on low for 1 hour. Taste then salt and pepper to taste, remove bay leave and you are ready to serve.
  2. Don’t forget the garnishes: which could be cheese, avocado, cilantro, jalapenos, sour cream, tortilla chips.

Beef Short Rib Chili / Slow Cooker

This spicy beef short rib chili is made in the slow cooker so once assembled you can go on your way. Or make the day before and just reheat in the slow cooker when you need it.

Beef Short Rib Chili / Slow Cooker

Ingredients

  • 6 beef short ribs (about 3 1/2 lbs)
  • 6 chili de arbols
  • 2 chili ancho
  • 2 roasted jalapenos (remove skin & seeds- to turn down the heat)
  • 2 chipotle peppers
  • 2 to 3 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 2 15oz cans black beans (rinsed and drained)
  • 4 15oz cans fire-roasted tomatoes
  • 1 teaspoon red chili pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chipotle ground pepper
  • salt and pepper
  • 1 large yellow onion – finely diced
  • 1 large shallot – finely diced
  • 2 tablespoons fresh cilantro (optional)
  • 5 to 6 garlic cloves- finely chopped

Takes 10 min

Instructions

  1. Heat olive oil in a large cast iron frying pan.
  2. Salt and pepper the beef ribs on all sides
  3. Heat oil to get it really hot in large frying pan.
  4. Brown the beef ribs on all sides, remove from pan. While the beef ribs are browning put the chili de arbos and ancho chili in the heated oil to soften them up at bit – remove from pan, de-seed and place the chilies in a blender.
  5. Blender: to the chilies in the blender add the jalapenos, chipotles, 1 can of the tomato sauce, tomato paste. Puree well. Set aside
  6. Into the same cast iron pan add the onion & shallot, salt and sautee for about 3 minutes. Add the chopped garlic and sautee for another minute or so. Do not burn the garlic!.
  7. Layer the slow cooker: onion/garlic mixture, browned ribs, black beans, chili mixture from the blender, the dried spices, 3 cans of fire-roasted tomatoes, cilantro and s&p to taste.
  8. Cook on low for approximately 7 hours. Remove the ribs and cut the meat into bit size pieces and discard the bones.
  9. Serve with your favorite accoutrements (i.e.: cheese, sour cream, avocados)
  10. Another way to serve is to hollow out corn bread muffins and put the chili in the muffin…

Three Bean Turkey Chili

Since I am still having to eat softer foods I decided to make a chili. The surprising ingredients in this chili is kale and broccoli. Great way to sneak in veggies and no one will be able to tell…this is how to make chili a healthy dish. I do not like super hot foods so therefore the amount of chili that is in the recipe can be increased if you prefer “blow your brains out hotness”.

Three Bean Turkey Chili

Ingredients

  • 2 cups chopped white onion
  • 1 cup chopped red onion
  • olive oil
  • salt and pepper
  • 2 teaspoons chopped garlic
  • 2 jalapeno – seed, deveined and chopped
  • 2 chipotle peppers – chopped
  • 3 dried chili de arbols – chopped
  • 1 1/4 lbs ground turkey
  • 1 package of broccoli/kale slaw mixture – pureed in the food processor (this is about 2 cups of pureed veggies)
  • 1 tablespoon tomato paste
  • 4 15oz cans fire roasted green chilitomatoes
  • 1 bay leaf
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon chili powder
  • 1 15oz can kidney beans – drained and rinsed
  • 1 15oz can pinto beans – drained and rinsed
  • 1 15oz can white kidney beans – drained and rinsed
  • zest of 1 lemon
  • juice of 1/2 of the zested lemon

Takes 45 min

Garnishes;

  • avocado
  • cheese
  • sour cream

Instructions

  1. Heat two tablespoons olive oil in dutch oven. Add white and red onion, salt & pepper, saute for about 3 minutes.
  2. Add the chopped garlic the onions and continue to saute for another minute.
  3. Add jalapenos, chipotle and chili de arbol chilis to onion mixture and saute together for 3 minutes.
  4. Salt and pepper the ground turkey meat and add to onion/chili mixture and cook until the turkey meat is cooked thru – approx. 3 to 5 minutes.
  5. Add pureed broccoli/kale mixture and cook for 3 minutes.
  6. Add tomato paste to pan and saute for 2 minutes.
  7. Add the remaining ingredients into the pot, cover and simmer for 1/2 hour.
  8. Serve with garnishes of your choice.
