Chicken Chorizo Sausage and Black Bean Chili

It’s almost time for Super Bowl – the teams are getting ready to score big and you are now planning the Super Bowl Party Menu and you can also score big with this Chicken Chorizo and Black Been Chili as it is a huge winner.

Chicken Chorizo Sausage and Black Bean Chili

Ingredients

  • 1.5 lb (5 sausages) Chicken chorizo sausages (I found that Whole Foods makes chicken chorizo sausages but if you want you could use pork) – meat removed from casings
  • 1 large white onion – diced
  • 1 large shallot – diced
  • 1 red pepper – diced
  • 1 orange pepper – diced
  • 2 jalapenos – seeded and deveined – finely chopped
  • 4 garlic cloves – finely chopped
  • 1 dried chili ancho – stem removed and finely chopped
  • 1/2 teaspoon chipotle pepper
  • 1/2 teaspoon cayenne
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 bay leaf
  • 1 28 oz can fire roasted tomatoes
  • 1 14.5 oz can fire roasted tomatoes
  • 2 – 15 oz cans black beans – rinsed and drained
  • 3 to 4 tablespoons olive oil
  • salt and pepper
  1. Heat olive oil in a cast iron dutch oven, add the chorizo, crumble and cook about 3/4 the way thru. Add the onion, shallot, peppers to pot, lightly salt and pepper, saute for about 5 minutes, then add the garlic, saute for another 3minutes. Add all the remaining ingredients, stir to combine and simmer on low for 1 hour. Taste then salt and pepper to taste, remove bay leave and you are ready to serve.
  2. Don’t forget the garnishes: which could be cheese, avocado, cilantro, jalapenos, sour cream, tortilla chips.

Roasted Carrot, Ginger & Sweet Potato Soup

It’s cold and rainy so why not make a warming and very healthy soup.

Roasted Carrot, Ginger & Sweet Potato Soup

Ingredients

  • 2 lbs carrots – chopped into 1 inch piece (not peeled)
  • 1 head of garlic
  • 1 1/2 white onions – halved
  • 2 sweet potatoes
  • 3″ fresh ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 3 to 4 tablespoons olive oil
  • salt and pepper
  • 1 1/2 quart vegetable broth (if you want a thinner soup you can add additional broth
  1. Preheat oven to 400 degrees.
  2. On a baking sheet put the chopped carrots, onions, sprinkle with 2 to 3 tablespoons of olive oil, salt and pepper; and the sweet potatoes that have been slit with a knife. Cut the top off the head of garlic, place on piece of aluminum foil with 1 tablespoon olive oil, salt and pepper – wrap up bulb and place on baking sheet. Bake at 400 for 45 minutes. Remove the carrots, onions and garlic and continue to cook the sweet potatoes for another 15 minutes.
  3. While the sweet potatoes continue cooking put the roasted carrots, onions and garlic into a blender with 1/2 quart of vegetable broth to puree. Add the puree to a dutch oven, smash the cooked sweet potatoes and add to pot along with the remaining quart of vegetable stock, grated ginger, basil, & paprika. Stir well to combine and simmer for about 15 to 20 minutes. Taste and add salt and pepper to taste.

Chicken, Lentil & Greens Soup

This soup is healthy, nutritious, filling and just so very flavorful.

Chicken, Lentil & Greens Soup

Ingredients

  • 6 boneless, skinless chicken thighs – cut into bite size pieces
  • 1 sweet yellow onion – diced
  • 2 medium shallots – diced
  • 2 garlic cloves – finely minced
  • 2 quarts low sodium vegetable stock
  • 1 1lb bag mixed greens: mustard / turnip / collards / spinach mix
  • 1 9oz bag snow peas – stings removed and cut into 1/2 inch pieces
  • 1/2 cup green lentils
  • 1 15oz can garbanzo beans – drained and rinsed
  • salt and pepper
  • 3 to 4 tablespoons olive oil
  1. In a dutch oven heat the olive oil. Salt and pepper the chicken pieces, add to hot oil, sauté for 10 to 15 minutes (so chicken get color but it is not cooked completely).
  2. Remove chicken from pot, add onions and shallots, salt and pepper and cook for 3 minutes.
  3. Add the minced garlic and cook for 1 additional minute. Add 1/2 cup of the vegetable broth to deglaze the pot.
  4. Add the balance of 1 of the quarts of vegetable broth and sautéed chicken and simmer for 30 minutes.
  5. Add the 2nd quart of vegetable broth, garbanzo beans and greens. Stir the mixture to combine and simmer for about 15 minutes to wilt the greens.
  6. Taste the soup to see if you need to add salt and pepper.

Chicken Sausage Soup

It’s cold, it’s rainy and you want something comforting; yet it is the beginning of the year and you said you would eat healthy – well here is a soup that that is warming, healthy and yummy.

Chicken Sausage Soup

Ingredients

  • 1 1/2 cups chopped yellow onion
  • 1 1/2 cups chopped carrots
  • 1 1/2 cups chopped celery
  • salt & pepper
  • 2 tablespoon olive oil
  • 2 1/2 sweet sausages (pork or chicken) – removed from casing
  • 2 1/2 hot/spicy sausages (pork or chicken – removed from casing
  • 4 cloves finely chopped garlic
  • 1/2 teaspoon dried coriander
  • 2 dried bay leaves
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried basil
  • 8 piece cut up chicken (skin on and bone in)
  • 1 quart of vegetable broth + additional 1/2 quart of veggie broth
  • 1 piece of Parmesan rind
  • 5 to 6 springs fresh thyme
  • 1 bag (1 lb 12oz) small potato melody (cut potatoes into quarters)
  • 1 cup frozen roasted corn
  • 1 cup fresh (or frozen) peas
  • 1/2 bag (3 oz) baby spinach
  • 1/2 bag (5 oz) Tuscan kale
  1. In a large dutch oven heat the olive oil, add the chopped onion, carrot & celery, sprinkle with salt & pepper and saute for 3 to 5 minutes
  2. Add sausage meat to pan, break into little pieces and continue to cook.
  3. Add coriander, bay leafs, paprika, basil and chopped garlic. Stir all ingredients together and cook until sausages are browned.
  4. Salt and pepper the chicken pieces and add to pot skin side down to brown. Cook for about 5 minutes…remember color means flavor.
  5. Now add the chunked pieces of onion, 1 quart of vegetable broth, parm rind, 7 thyme sprigs and simmer covered for about 40 minutes.
  6. Remove chicken pieces from pot, along with thyme stems. Skin the chicken, remove from bones, shred or cut up the chicken meat and put back in soup pot. Add corn, peas and 1/2 quart of vegetable broth and continue to simmer covered for 35 minutes.
  7. Add the spinach and kale to pot and continue to simmer until wilted (about 10 minutes).
  8. Now you have a very tasty nutritious soup. Enjoy!

Summer roasted vegetable soup with red lentils

I have recently had dental surgery and chewing is not really an option, but I was craving vegetables and came up with this roasted vegetable soup.  It is chocked full of veggies and is so very flavorful. This soup would also be a great addition to a grilled cheese sandwich, omelet or quiche and a great way to use up extra summer veggies.

Summer Roasted Vegetable Soup with Red Lentils

Lentils

  • 2 1/2 cups vegetable broth
  • 1 cup red lentils
  • salt and pepper to taste

Instructions

  1. In a dutch oven cook the red lentils per package instructions. When lentils are done just leave them in the dutch oven awaiting the roasted veggies.

Roasted Vegetables

  • 3 to 4 large red peppers *
  • 2 heads of garlic – tops cut off, placed in foil drizzled with olive oil, salt and pepper, closed foil package
  • 3 huge or 6 large heirloom tomatoes – cut into chunky pieces
  • 3 to 4 medium zucchini – cut into chunky pieces
  • 2 large red onions – cut into chunky pieces
  • 1/4 cup olive oil + extras for the garlic
  • salt and pepper

Instructions

  1. Place all the cut veggies on a baking sheet, drizzle the olive oil and sprinkle with salt & pepper. Place veggies and garlic package in the heated oven and roast for 45 minutes.
  2. Place roasted veggies on cooling rack for about 10 to 15 minutes so that you can handle them. Smush** the roasted garlic cloves from the the head & puree with the veggies in a food processor and add to the cooked lentils in the dutch oven.

Soup

  • 1 quart vegetable broth (low sodium)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 bay leaf
  1. Combine the soup ingredients to the dutch oven, simmer on low for 20 to 30 minutes. Remove bay leaf and serve.
  2. *Stove top pepper roasting: char the peppers on the open gas flame, put in a ziplock bag to steam. When roasted veggies are done, remove from bag, take paper towel and wipe off the char and remove the inside seeds. If you don’t want to do that or have only an electric stove you can roast them with the rest of the vegetables.
  3. **SMUSH is a technical term meaning to squeeze the whole garlic head to release the roasted garlic cloves
